Sweet Pot Casserole






10 large sweet potatoes, cooked and diced
4oz butter
1 c. brown sugar
½ c. granulated sugar
1 c. raisins
1 c. finely chopped walnuts
½ tsp. allspice
Pinch nutmeg

            Procedure:
1.      Boil sweet potatoes until almost fully cooked and can be inserted with a fork.
2.      Place sweet potatoes into greased baking dish.
3.      Melt butter in a sauce pan and add sugars, raisins, nuts, and spices.
4.      Once all the ingredients dissolve, pour over sweet potatoes.
5.      Bake at 375 degrees for 45 minutes to 1 hour, or until fully cooked and liquid becomes a syrup.
6.      Carefully pull out of the oven and top with mini marshmallows.
7.      Place back into oven and cook until marshmallows are golden brown.


I know this is a common dish that is at everyone has at their Thanksgiving. There is nothing unique about it that stands out from anyone else. But I can say that I love this dish, and look forward to it every year. My mom has a strict way of making this, and takes no criticism to change her technique. Why should she? It tastes amazing and no matter how it is made the result is always amazing.


Making sweet potato casserole is an old family tradition that never seems to get old. My mom always has to be the one to make it every year. Probably because there is not a lot of recipes she can cook. She will always prepare this the night before, covering it up and leaving it in the fridge. Mom loves doing this to save time by tossing it in the oven before the family arrives. Yet, every year, the family starts eating and mom is late toasting the marshmallows on top. It’s not that bad of a situation, but it’s hilarious how it is a repeating cycle with her. She is the best!
